Nuggets

Our extruded, higher-density particulates are available in small, medium, large, and crescent shapes, and in a wide variety of sweet-type flavors and colors. Nuggets are typically used as internal product inclusions. When heat processed—baked, cooked, fried, etc.— they melt out and provide valuable sensory attributes to the product, forming pockets of color, flavor, and texture.

Melt properties and color weeping can be controlled through both the formulation of the nugget (ingredient selection) and their method of incorporation into the finished product. ‘Traditional’ nugget recipes are the most economical, as they contain artificial colors and flavors, but we also offer “value-added” formats of nuggets to satisfy non-GMO, clean-labeled, and allergen-free label requirements.

Flakes

Our flaked products are available in both fine and coarse mesh sizes, and are created from a corn cereal backbone. These lower-density flakes vary in size and shape, and are often recommended for topical or external use on finished products. Flakes may also be used as internal inclusions for baked items.

When used topically, flakes provide a crunchy texture and deliver targeted flavor, color, and aroma to finished products. The melt properties of flakes cannot be altered, so when they are applied internally, they typically deliver a “marbled” appearance and greater distribution in the dough or food system versus nuggets. The corn cereal component delivers a different texture than our nuggets, and coloring bleed with the flakes can be somewhat controlled. When using synthetic colors, coloring can be more easily manipulated. However, the water-soluble nature of natural color-based systems can cause unprecise color weeping.
